- 2 cups full-fat plain Greek yogurt (unsweetened)
- Cheesecloth or clean kitchen towel
Instructions
- Line a strainer or colander with cheesecloth or a clean towel.
- Place the strainer over a bowl to catch the draining liquid (whey).
- Spoon Greek yogurt into the cloth and fold the edges over the top.
- Refrigerate and let it strain for 12 to 24 hours.
- 12 hours = soft and spreadable
- 24 hours = thicker, firmer texture
- Remove from cloth and transfer to an airtight container.
- Store in the fridge for up to 5 days.
Notes
- Add flavor by mixing in fresh herbs, lemon zest, or garlic after straining.
- For a sweeter version, add a drizzle of honey or maple syrup.
- If you don’t have cheesecloth, use a clean thin dish towel or coffee filter.
