For the Banana Bread Base:

  • 3 ripe bananas, mashed

  • ½ cup unsalted butter, melted

  • ½ cup brown sugar

  • ¼ cup granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • 1½ cups all-purpose flour

  • 1 tsp baking soda

  • ½ tsp salt

  • Optional: ½ tsp cinnamon

  • Optional: ½ cup chopped walnuts or pecans

  • Optional: ½ cup mini chocolate chips

For the Cream Cheese Swirl:

  • 1 block (8 oz) cream cheese, softened

  • ¼ cup granulated sugar

  • 1 egg yolk

  • ½ tsp vanilla extract

Instructions

  • Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan with parchment paper.

  • Mash bananas in a large bowl until mostly smooth.

  • Stir in melted butter, sugars, eggs, and vanilla until combined.

  • Add flour, baking soda, and salt. Stir just until mixed. Fold in optional cinnamon, nuts, or chocolate chips if using.

  • In a separate bowl, blend cream cheese, sugar, egg yolk, and vanilla until smooth.

  • Pour half the banana batter into prepared pan.

  • Spread cream cheese filling evenly on top.

  • Top with remaining banana batter and gently swirl with a knife.

  • Bake for 55–65 minutes, or until a toothpick inserted (not through the cream cheese) comes out mostly clean. Tent with foil if browning too quickly.

 

  • Cool in pan 10–15 mins, then fully on a wire rack before slicing.

Notes

  • Banana hack: Not ripe enough? Bake bananas (peels on) at 300°F for 15 minutes.

  • Make muffins or minis: Bake muffins for 20–25 mins; mini loaves for 35–40 mins.

  • Storage: Wrap and refrigerate for up to 5 days, or freeze for 3 months.
