Ingredients
– 12 oz egg noodles or pasta, cooked al dente
– 1 lb ground beef (85/15 recommended)
– 1 small yellow onion, diced
– 2 cloves garlic, minced
– 1 tsp salt
– ½ tsp black pepper
– ½ tsp smoked paprika or chili powder (optional)
– 8 oz cream cheese, softened
– 1 cup sour cream
– ½ cup beef broth or reserved pasta water
– 1½ cups shredded sharp cheddar cheese
– Cooking spray or butter, for greasing
Instructions
1. **Preheat oven** to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
2. **Cook pasta** in salted water until al dente. Drain and set aside.
3. **Brown the beef:** In a large skillet, sauté onion in a little oil over medium heat for 3–4 minutes. Add garlic and cook for 30 seconds. Add ground beef, salt, pepper, and paprika. Cook until browned and no longer pink. Drain excess grease.
4. **Make it creamy:** Lower heat. Stir in softened cream cheese until fully melted and smooth. Add sour cream and broth to loosen the mixture. Remove from heat.
5. **Assemble:** Layer cooked noodles in prepared baking dish. Spread meat mixture on top and gently mix or smooth into an even layer. Sprinkle cheddar cheese over the top.
6. **Bake uncovered** for 20–25 minutes, or until cheese is bubbly. For a golden crust, broil for the last 2–3 minutes.
7. **Rest 5–10 minutes** before serving for best texture.
Notes
– Swap in tater tots, peppers, or taco seasoning for fun variations.
– To freeze, wrap tightly and label. Keeps for 2 months.
